Step Up Your Espresso

The original Gaggia Classic became popular because it got the important things right: a compact Italian design, a proper group and portafilter format, a commercial-style steam wand and a simple manual brewing workflow.

The Classic UP keeps that foundation but adds considerably more control.

Gaggia has taken several of the upgrades that home baristas commonly look for and integrated them at the factory: PID temperature control, pre-infusion adjustment, a pressure gauge, shot timer and a professional 58mm filter holder.

The result is a Classic that doesn’t require you to start modifying the machine before you can begin experimenting with espresso.

It is still compact and approachable, but there is considerably more to work with.


Why We Stock It

For us, the interesting part of the Classic UP isn’t the display.

It’s what the controls allow you to do with the coffee.

Temperature, pressure and pre-infusion all influence extraction. Having those variables built into the machine gives you a much more useful platform for learning how different coffees behave.

The adjustable PID lets you change brewing temperature directly from the display.

The three pre-infusion levels give you another way of adapting the extraction to the coffee.

And the fixed 9-bar OPV means the machine is configured around a sensible espresso brewing pressure from the factory.

That combination makes the Classic UP much more than a cosmetic update to the Classic platform.


Two PIDs. One Compact Machine.

The Classic UP uses two PID controllers:

Brew PID

The brew PID controls the temperature of the 0.12L lead-free brass boiler and allows the brewing temperature to be adjusted through the machine’s display.

This matters because different coffees can respond differently to brewing temperature.

A lighter roast may benefit from a higher brewing temperature, while a darker roast can often be more forgiving at a lower temperature.

Having that adjustment available means you can work with the coffee instead of treating temperature as a fixed variable.

Steam PID

The second PID controls the steam side of the machine.

This gives the Classic UP dedicated temperature management for steaming rather than relying on a simple mechanical thermostat alone.


Adjustable Pre-Infusion

Pre-infusion is the stage where water first wets the coffee puck before the main extraction.

The Classic UP lets you choose between three pre-infusion levels: MIN, MED and MAX, or switch pre-infusion off completely.

This gives you another variable when dialling in.

Gaggia specifically notes that lighter roasts can benefit from longer pre-infusion, while darker roasts generally require less.

For the home barista, this means you can experiment with how the puck responds before changing your grind unnecessarily.


Fixed 9-Bar Brewing Pressure

The Classic UP uses a 9-bar brewing pressure setting, with the pump rated at 15 bar nominal pressure.

The important number for espresso is the brewing pressure, not the pump’s maximum nominal rating.

The fixed 9-bar OPV gives the machine a sensible espresso pressure without requiring an aftermarket pressure modification.

The analogue pressure gauge also lets you see what is happening during the extraction.


58mm Professional Filter Holder

The Classic UP uses a 58mm stainless-steel professional filter holder with an ergonomic handle.

This is an important part of the machine for anyone getting serious about espresso.

A 58mm format gives you access to a broad range of professional-style baskets and accessories, making it easier to build a consistent preparation workflow.

The machine includes:

The articulation gives you room to position the wand correctly inside the milk jug, while the single-hole tip provides the control needed to introduce air and create smooth microfoam.

For anyone making flat whites, cappuccinos or latte art, this is considerably more useful than the small automatic-style frothing systems found on many entry-level machines.


Two Drip Tray Positions

One of the less glamorous but genuinely useful features is the two-position drip tray.

The standard tray accommodates normal espresso cups, while the lower tray provides additional clearance for taller cups or for using a scale underneath the portafilter.

Aura Bean Tip

The Classic UP gives you more control, but don’t change everything at once.

Start with a simple recipe such as:

18g dose → 36g yield → 25–30 seconds

Then adjust your grind first.

Once you have a consistent baseline, experiment with the brew temperature and pre-infusion.

That’s where the Classic UP becomes interesting.

If a lighter coffee tastes sharp or underdeveloped, try increasing the temperature or pre-infusion rather than immediately changing five variables at once.

The goal is to understand what the coffee is telling you.
